Cashews - Beneficial Foods
The cashew is one of the odder things on the grocery shelf. It is not a nut botanically. It grows dangling below a fruit rather than inside one. It is sold in bins labeled “raw” even though no cashew anywhere reaches a consumer raw, because the shell around it is packed with a blistering resin related to the oil in poison ivy. And it happens to be one of the richest sources of copper and magnesium a person can eat without touching an organ meat or a supplement bottle. Cashews are groceries here, not a therapy.

Introduction and History
The cashew tree, Anacardium occidentale, is native to northeastern Brazil — the coastal sandbanks and dry interior scrub of what are now Ceará, Piauí, Rio Grande do Norte and Maranhão. It is a sprawling, low, wide-crowned evergreen that thrives in poor sandy soil where almost nothing else productive will grow, and that single agronomic fact explains most of its world history.
The Tupi peoples of the Brazilian coast were eating cashews long before any European saw one. Their name for it was acajú, which the Portuguese rendered as caju and English eventually mangled into “cashew.” What the Tupi valued most was not the kernel but the swollen stalk above it — the cashew apple — eaten fresh, pressed for juice and fermented into a seasonal drink. The kernel was a second prize, extracted by roasting the whole nut in a fire until the shell cracked and the resin inside burned off. Sixteenth-century Portuguese accounts describe the cashew season as a period of feasting.
Portuguese traders carried cashew seed out of Brazil in the later 1500s, to Goa on the west coast of India and to Mozambique and the East African coast. In both places the motive had nothing to do with food: the cashew is an excellent sand-binder with a wide root plate, and colonial administrators planted it to stabilize eroding dunes and degraded hillsides. Nobody imagined an export commodity. The tree simply liked its new homes and naturalized across the tropics of India, Sri Lanka, Southeast Asia and coastal Africa within a couple of centuries.
Food use followed. Indian cooks found what the cashew could do that no local nut could: because the kernel is starchy and low in coarse fiber, it grinds into a completely smooth, sweet, pale paste — the ideal thickener for the courtly gravies of Mughal-influenced kitchens. The shelling problem kept it artisanal for a long time. The modern industry begins in the early twentieth century in Kollam (Quilon) in Kerala, where hand-shelling operations grew into processing houses that imported raw nuts from East Africa and shipped graded white kernels abroad, making India the world's shelling floor for most of the twentieth century. That geography has shifted again: West Africa now grows a very large share of the world's raw cashew nut, and Vietnam has become the dominant mechanized processor.
Botany: A Seed Beneath a False Fruit
After the tree's flowers are pollinated, the flower stalk itself — the receptacle, technically the hypocarp — swells into a soft, juicy, pear-shaped body five to ten centimeters long, colored anywhere from pale yellow to scarlet. This is the cashew apple, and it is not a fruit at all but a fleshy accessory structure: astringent, extremely juicy, faintly resinous and very perishable. Hanging from its bottom end is the true fruit, a small kidney-shaped grey-green drupe, and inside that shell sits a single seed. That seed is the cashew you eat. Each apple carries exactly one nut, which is one reason cashews are expensive — yield is limited by flower count and every nut must be harvested individually.
The shell is the crucial part. It is not a simple woody husk like a walnut's; it holds a honeycomb of cells filled with a dark, viscous, acrid liquid known industrially as cashew nut shell liquid, or CNSL, whose chemistry is covered in the processing section below. Cashew, mango, pistachio, sumac and poison ivy all sit in the family Anacardiaceae, and resinous chemistry is a family trait. The kernel inside is wrapped in a thin reddish-brown seed coat, the testa, peeled away in processing to leave the pale ivory kernel from the jar.
Nutritional Profile per 100 Grams
Figures below are for plain cashew kernels — the product sold as “raw,” a label examined further down. One hundred grams is a large amount, roughly two-thirds of a cup or 60 to 70 whole kernels. A realistic serving is 28 to 30 grams, so divide by about three and a half for a handful.

Three of those numbers are unusual for a nut. Cashews are starchy — 23 grams per 100 is far more than almonds, walnuts or pecans carry, and it is why a soaked cashew blends into thick glossy cream instead of gritty meal. They are low in fiber, 3.3 grams against roughly 12 in almonds. And they are comparatively sweet: nearly six grams of free sugar is why they brown so fast in a pan and scorch if you look away. Soft texture, low fiber and sweetness together also make them very easy to overeat.
Fats
- Saturated: about 7.8 g, mostly palmitic (about 4.5 g) and stearic (about 2.6 g) acid
- Monounsaturated: about 23.8 g, overwhelmingly oleic acid
- Polyunsaturated: about 7.8 g, almost entirely linoleic acid
- Alpha-linolenic acid (omega-3): roughly 0.06 g — a trace
The cashew's fat is oleic-acid dominant, putting its signature closer to olive oil or almonds than to walnuts. One double bond is far harder to attack than the two or three in linoleic and alpha-linolenic acid, so cashews go rancid more slowly than walnuts. It is also a limit: cashews are not an omega-3 food. That job belongs to walnuts, flaxseed and chia seeds for alpha-linolenic acid, and to oily fish for the long-chain omega-3s.

Protein quality and the calorie footnote
Notable amino acids per 100 g include glutamic acid about 4.5 g (part of why cashews taste savory as well as sweet), arginine about 2.1 g, leucine about 1.5 g and tryptophan about 0.29 g. Cashew protein is respectable in quantity for a plant food but, like most nuts, limited by its lysine content — a real contributor to a day's protein rather than a complete standalone source.
An honest correction to the calorie figure: human balance studies find the metabolizable energy of cashews is meaningfully lower than Atwater factors predict, by roughly sixteen percent, because nut cell walls resist breakdown and some fat inside intact cell fragments is never released. A 28-gram serving labeled 163 calories behaves more like 137. Chewing thoroughly, or grinding cashews into butter or cream, erases part of that discount by liberating the trapped fat.
Magnesium
At roughly 292 mg per 100 grams, cashews are one of the better whole-food magnesium sources available. A 30-gram handful supplies about 87 mg — on the order of twenty percent of an adult's daily requirement from one small snack. Among everyday nuts and seeds only pumpkin seeds and a few other seeds clearly beat them. That matters because magnesium is the mineral most people quietly run short of: intake surveys in industrialized countries consistently find a large fraction of adults below the estimated average requirement, and the shortfall traces to what displaced whole foods — refined grains lose most of the magnesium in bran and germ, and sugary drinks supply none.
Magnesium is a cofactor for upward of three hundred enzymatic reactions, and several of its roles are load-bearing rather than incidental:
- Every ATP transaction. ATP is biologically active as a magnesium complex, Mg-ATP; without magnesium bound it cannot be handled by kinases and ATPases. Magnesium is part of the energy currency itself, not a peripheral nutrient.
- Glucose metabolism. Hexokinase, phosphofructokinase and pyruvate kinase are all magnesium-dependent, as is autophosphorylation of the insulin receptor's tyrosine kinase.
- Vitamin D activation. Both the hepatic 25-hydroxylase and renal 1-alpha-hydroxylase steps are magnesium-dependent, as is parathyroid hormone signaling — which is why some people with stubbornly low vitamin D despite supplementation are really magnesium-limited.
- Calcium channel and NMDA receptor gating. Magnesium sits in the mouth of the NMDA receptor as a voltage-dependent block and antagonizes calcium entry into smooth muscle. Losing that braking action is the mechanism behind the cramping, twitching and hyperexcitability of low magnesium status, and behind its effect on vascular tone and blood pressure.
- DNA and RNA synthesis and repair — polymerases and ligases require it.
The symptoms people actually notice are unglamorous and easy to blame on something else: night cramps in the calves, a twitching eyelid or thumb, restless legs, constipation, poor sleep, headaches, and a general sense of being wound too tight.
Absorption from a mixed diet runs roughly thirty to fifty percent and falls as intake rises, and phytate in nuts binds some of it. Even so the arithmetic favors cashews: 87 mg per handful at a thirty to forty percent absorbed fraction still deposits far more than a food supplying none. Unlike magnesium oxide tablets, food magnesium does not cause osmotic diarrhea, because it arrives slowly and alongside fat and protein that slow gastric emptying.
Copper
This is the cashew's standout claim and it is genuinely remarkable. At approximately 2.2 mg of copper per 100 grams, cashews sit near the top of the entire food supply. The adult requirement is about 0.9 mg per day, so a single 30-gram handful supplies roughly 0.66 mg — about three-quarters of a day's copper from one snack. Outside organ meats, shellfish and cocoa, few foods come close; among plant foods eaten in ordinary quantities cashews are essentially in a class with dark chocolate and sesame.
Copper gets far less attention than iron or magnesium, which is odd given what it does. It is the catalytic metal in a small set of enzymes, each essential:
- Cytochrome c oxidase (Complex IV of the electron transport chain) hands electrons to oxygen at the end of the respiratory chain. Every molecule of ATP your mitochondria make oxidatively passes through a copper center.
- Ceruloplasmin and hephaestin are copper-dependent ferroxidases that oxidize ferrous iron to ferric so it can be loaded onto transferrin and carried to the marrow.
- Lysyl oxidase cross-links collagen and elastin; deficiency produces fragile connective tissue, poor wound healing and vascular fragility.
- Copper-zinc superoxide dismutase (SOD1) is the primary cytosolic defense against the superoxide radical.
- Dopamine beta-hydroxylase converts dopamine to norepinephrine, so copper status touches catecholamine balance directly.
- Tyrosinase makes melanin; depigmentation of hair and skin is a classic sign of severe deficiency.
The copper-iron connection
The single most useful thing to know about copper is that copper deficiency causes an anemia that iron cannot fix. Because ceruloplasmin is required to mobilize iron out of storage and onto transferrin, a copper-deficient person can have adequate or even elevated tissue iron and still present with a hypochromic, microcytic anemia that looks exactly like iron-deficiency anemia and does not respond to iron. Severe cases add neutropenia and a myelopathy resembling subacute combined degeneration, with sensory ataxia and spinal cord signs.
This is not theoretical. It is documented repeatedly in the hematology literature, most often after bariatric surgery, during long-term parenteral nutrition without adequate trace elements, and — the case most relevant to the general public — in people taking high-dose zinc supplements. Zinc induces metallothionein in the intestinal enterocyte; metallothionein binds copper far more tightly than zinc and holds it in the cell until the cell is shed, so high zinc intake actively blocks copper absorption. Reported cases have been triggered by zinc-containing denture adhesives and by long runs of high-dose zinc lozenges taken for colds.
The practical reading is simple. If you take supplemental zinc regularly, copper-rich whole foods stop being a nicety and become a counterweight, and cashews are among the most convenient; anyone deliberately depleting copper under medical supervision must do the opposite (see the cautions). One caveat about the 2.2 mg figure: copper content in plant foods varies with soil, cultivar and region, so treat it as a good central estimate rather than a guarantee for a particular jar. Even at the low end of the reported range, cashews remain an excellent copper food.
Iron, Zinc and the Rest of the Minerals
At about 6.7 mg per 100 grams, cashews carry a high iron figure on paper — roughly a third of the daily requirement for a menstruating woman. The catch is bioavailability. All of it is non-heme iron, and non-heme absorption from plant foods typically runs between two and twenty percent depending on the rest of the meal and how depleted the eater is, with phytate and polyphenols in the nut pulling toward the low end. A 30-gram serving supplies about 2 mg on paper and perhaps 0.1 to 0.3 mg absorbed in practice — a real contribution to a day's iron economy and not remotely a treatment for deficiency. Anyone with documented iron-deficiency anemia needs a workup for the cause of the loss, not a bowl of nuts.
Two things genuinely improve the yield. Eat cashews with vitamin C: ascorbate reduces ferric iron to the absorbable ferrous form and chelates it into a soluble complex that survives the alkaline duodenum, so cashews scattered over a salad with bell peppers or eaten alongside citrus do measurably better. And keep tea and coffee away from the meal — the polyphenols in coffee and tea are among the strongest known inhibitors of non-heme iron absorption, and half an hour of separation helps.
- Zinc at about 5.8 mg per 100 g is substantial for a plant food against an adult requirement near 8 to 11 mg. Phytate binds a portion, so the absorbed fraction is lower than the number suggests, but cashews are still one of the better plant zinc sources.
- Phosphorus at about 593 mg is high, but most is bound as phytate, which humans digest poorly for lack of meaningful phytase activity. Practical bioavailability is roughly half that of phosphate additives in processed food — a distinction that matters a great deal in kidney disease.
- Potassium at about 660 mg is respectable, comparable per hundred grams to a large banana. Useful for most people, restricted for some with advanced kidney disease. See Potassium.
- Manganese at about 1.66 mg supplies most of a day's adequate intake per hundred grams. Manganese is the metal cofactor for mitochondrial superoxide dismutase and for several glycosyltransferases in cartilage synthesis.
- Selenium at about 20 micrograms is moderate — better than most nuts other than the Brazil nut, which is in a category of its own and can genuinely be overdone. Cashews cannot realistically be overdone for selenium.
Honesty about gaps is more useful than a list of superlatives. Cashews are low in vitamin E (about 0.9 mg per 100 g against roughly 25 mg in almonds), low in calcium, low in fiber, and carry almost no omega-3 fat, while being relatively high in starch and sugar for a nut. If you want one nut for vitamin E, calcium and fiber, that is the almond. Cashews and almonds are complements, not substitutes, and there is no reason to choose between them.
Why Cashews Are Never Sold Truly Raw
Walk into any market and you will find bins labeled “raw cashews.” That label is a trade convention, not a description. No cashew reaches a consumer without heat treatment, and none can, because the shell is filled with a blistering caustic resin that must be destroyed before the kernel can be safely handled.
Cashew nut shell liquid is roughly sixty to sixty-five percent anacardic acids, with cardol, cardanol and 2-methylcardol making up most of the rest. All are alkyl phenols, close chemical relatives of urushiol, and they behave like it: potent contact sensitizers that produce a delayed, intensely itchy, blistering dermatitis on skin contact and painful burns with prolonged exposure. The shell stains, and the vapor irritates eyes and airways. This is not a mild hazard — cashew shelling has historically been among the more injurious jobs in food agriculture, with chronic hand dermatitis, cracked and burned skin and nail damage widespread among hand-shellers working without protection, who in parts of the Indian industry traditionally rubbed their hands with ash or oil as a barrier.
How the industry gets the kernel out
Every commercial process destroys or drives off CNSL, then cracks the brittle shell without shattering the kernel. Three approaches dominate:
- Steam roasting. Raw nuts are steamed under pressure, typically around 100 to 120 degrees Celsius for fifteen to thirty minutes, which softens the shell, makes it brittle on cooling and denatures the resin. The nuts are then shelled, dried, peeled of their testa, graded and packed. These are what get sold as “raw” cashews. They have been cooked; they simply were not given a second browning roast.
- Oil-bath roasting. Nuts are dropped through a bath of hot CNSL at roughly 180 to 190 degrees Celsius for a couple of minutes. The shells rupture and release their own liquid, replenishing the bath — the classic large-scale method, with CNSL as a saleable by-product.
- Drum roasting. The traditional open-drum method, nuts tumbling over a fire until the shells split and the escaping resin flares off. Smoky, hard on the operator, still used at village scale.
So the honest description of a bin labeled “raw cashews” is: steam-treated, shelled, peeled, dried cashew kernels that have not been given a second browning roast. They are pale, soft, sweet and slightly waxy — not raw in the sense that a raw almond is raw.
What this means for you
- Do not try to shell cashews yourself without equipment and protection. If you are ever offered cashews still in the shell, treat them the way you would treat a bag of poison ivy.
- Never eat the nut straight off the tree. The advice sounds absurd until you are standing under a cashew tree in the tropics with the fruit in your hand. The kernel needs heat first.
- Rare residual-resin reactions happen. There are case reports of contact dermatitis and perioral reactions in people who ate inadequately processed kernels still carrying anacardic acid. If a batch produces burning lips or an itchy rash rather than an allergic pattern, poor processing is a plausible explanation.
- “Raw” is not a health claim here. Choose on flavor and use: pale steam-treated kernels blend into smoother cream because they are softer and more neutral, while browned kernels are better as a snack and a garnish.
A footnote worth knowing: CNSL is not waste but a valuable industrial feedstock, used in brake and clutch friction linings, resins and surface coatings, while anacardic acid itself is an active subject of pharmacological research. The cashew's defensive chemistry became a commodity.
Cashews in South Asian Cooking
Nowhere has the cashew been absorbed into a cuisine as deeply as in India, where it is kaju. What Indian kitchens grasped, and most Western kitchens still have not, is that the cashew is not primarily a snack. It is a thickener, an emulsifier and a source of richness. The mechanism is the composition above: roughly 44 percent fat, 18 percent protein, 23 percent starch, almost no coarse fiber. Soak that and blend it and you get a stable, pale, glossy emulsion — starch and protein do the emulsifying, fat supplies mouthfeel, and there is no fibrous grit to interrupt it. Functionally it behaves like cream with body, and it holds up to simmering without splitting.
An entire family of Mughal-influenced dishes is built on cashew paste. Korma in its classical form is meat or vegetables braised in onion, cashew or almond paste, yogurt and warm whole spices, deliberately pale — no turmeric, no chili to redden it, no tomato. Shahi paneer and navratan korma follow the same logic, and Rajasthan's safed maas, a white curry, gets its body from cashew paste and whole-milk yogurt. In these dishes the cashew is invisible on the plate and structural in the pot. The technique is worth stealing: soak kernels in hot water twenty to thirty minutes, blend with a little of the soaking water to a completely smooth paste, and add it after the aromatics are cooked but with enough liquid and low enough heat that it does not catch. Cashew paste scorches readily — remember the sugar content.
In sweets, kaju katli is emblematic: ground cashews cooked with sugar syrup into a smooth fudge, rolled thin, cut into diamonds, often finished with edible silver leaf. It is a Diwali sweet whose texture demonstrates directly what low-fiber, high-starch nut flour can do, and ground cashew also thickens payasam and kheer in the south. As a garnish, whole or halved cashews fried briefly in ghee until pale gold are a standard South Indian finishing element, scattered over lemon rice, pongal, upma, biryani and pilafs alongside curry leaves, mustard seed and dried chili — and this is where the scorch warning matters most, because cashews go from pale to burnt in about fifteen seconds in hot ghee.
Beyond India, Sri Lanka has a dish that barely exists elsewhere: kaju maluwa, tender young cashews simmered in coconut milk with turmeric, curry leaves and pandan until creamy and almost potato-like. Thai and Vietnamese cooking use whole cashews in stir-fries as texture rather than thickener. And Goa, the cashew's Indian point of entry, built its signature spirit around the other part of the plant: feni, distilled from fermented cashew apple juice, holds a geographical indication as a product of Goa.
Cashews in West Africa and Brazil
West Africa is now the center of gravity of world cashew production, and it has its own food culture around the tree that gets far less attention than India's. Côte d'Ivoire is the largest producer of raw cashew nut on earth, with Nigeria, Benin, Guinea-Bissau, Ghana, Burkina Faso, Tanzania and Mozambique all significant; in Guinea-Bissau the crop underpins the national economy to an extent almost unmatched by any single agricultural product anywhere. Much of the harvest has historically been exported unshelled for processing elsewhere, which is the source of long-running regional frustration — the value is added abroad — and local shelling capacity has been expanding in response. Domestically the uses are these:
- Roadside roasted kernels. Across Nigeria, Benin and Ghana, cashews roasted over charcoal, salted and sold in paper twists are an everyday street food. The tree is common enough in southern and middle-belt Nigeria that children eat cashews in season straight from it — the apple raw, the nut only after fire.
- Cashew paste in soups and stews. West African cooking has a deep tradition of nut- and seed-thickened stews: groundnut soup, egusi from melon seed, and other seed pastes. Ground cashew slots into exactly that role, stirred in toward the end and simmered until the oil separates, producing a rich, slightly sweet, thickened stew.
- Cashew apple juice and wine. The bigger and more overlooked story. Roughly nine kilograms of cashew apple are produced for every kilogram of nut, and most of it rots on the ground. Where it is used it is pressed fresh, fermented into local wine or distilled. The apple is extremely rich in vitamin C — considerably richer than orange juice by most analyses — and astringent from its tannins, which is why traditional processing often steams or salts it before juicing.
- A smallholder cash crop. Because the tree tolerates poor sandy soils and irregular rainfall, it is planted where grain crops fail, functioning as both erosion control and income — exactly the role the Portuguese originally intended for it in East Africa, arrived at independently.
In Brazil the plant is still understood as a whole. Castanha de caju is the kernel, used in the cooking of the northeast — ground into sauces, scattered over rice dishes, folded into confections — but the apple is the star: caju juice is a staple beverage, cajuĂna (a clarified amber cashew-apple juice from Ceará and Piauí) is a protected regional specialty, and the pulp turns up in ice creams and jams. Brazilians will tell you that treating the cashew as a nut and throwing the apple away is a peculiarly foreign mistake. The reason the rest of the world knows only the nut is simple mechanics: the apple bruises within hours of picking and cannot be shipped, while the nut keeps for a year. Global trade selected for the seed and discarded the fruit.
Oxalates, Phytates and Mineral Absorption
Two plant compounds in cashews bind minerals and matter to a subset of people. Neither is a reason for most people to avoid cashews, and pretending otherwise would be scaremongering. But for stone formers the oxalate question is real.
Oxalate
Oxalic acid binds calcium in the gut and in the urine, and calcium oxalate is the mineral in roughly three-quarters of all kidney stones. People who form them are commonly advised to keep dietary oxalate modest, often in the neighborhood of 50 to 100 mg per day.
Cashews are a moderately high oxalate food. How high is genuinely contested, and the honest answer is that published values disagree by a factor of several. Reported total oxalate figures for cashews commonly land between roughly 150 and 260 mg per 100 grams, depending on analytical method, whether soluble or total oxalate was measured, and the cultivar and origin of the sample. Older titrimetric methods differ systematically from modern enzymatic and chromatographic ones, and food oxalate databases inherit those inconsistencies. Anyone quoting the cashew's oxalate content to three significant figures is overstating what the data supports. What the range does support:
- A 30-gram handful delivers roughly 45 to 80 mg of oxalate. On a 50 to 100 mg daily target, that is most or all of the allowance in one snack.
- Among nuts, cashews sit in the upper middle. Almonds are considerably higher, frequently reported around 450 to 470 mg per 100 grams, which makes them the highest-oxalate common nut by a wide margin. Walnuts, pecans and macadamias are substantially lower than cashews, and pumpkin seeds are a relatively low-oxalate seed.
- For anyone not forming stones this is a non-issue. There is no evidence that ordinary dietary oxalate harms people with normal kidneys and normal oxalate handling.
The practical mitigations are worth knowing because two are counterintuitive:
- Eat cashews with a calcium-containing food — the single most effective tactic. Calcium in the gut binds oxalate into an insoluble complex that leaves in the stool instead of being absorbed, so cashews with whole-milk yogurt or cheese deliver less absorbed oxalate than the same cashews eaten alone.
- Do not restrict calcium. Low-calcium diets increase stone risk by leaving oxalate unbound and free to absorb; adequate calcium from food, around 1000 to 1200 mg a day, is protective.
- Keep urine dilute. Concentration matters more than any single food.
- Cooking does not help here. Boiling leaches oxalate out of leafy greens into water that gets discarded, which is why blanching spinach and cooking kale lowers their load. Nuts are not boiled and drained, so soaking and roasting do very little to their oxalate.
- Enteric hyperoxaluria is the high-risk case. When fat is malabsorbed — after bariatric surgery, in short bowel syndrome, in inflammatory bowel disease, in cystic fibrosis — unabsorbed fatty acids bind the calcium that would otherwise have bound oxalate, and oxalate absorption rises sharply. People in these categories need real dietary guidance, and cashews are a food to raise specifically.

Phytate
Phytic acid is the plant's phosphorus store, and it chelates iron, zinc, calcium and magnesium in the gut. Cashews contain phytate but less than most nuts — reported values are generally well under one percent by weight, against roughly one to three percent in almonds and higher still in Brazil nuts. Phytate is not a poison; it has documented antioxidant activity and binds excess iron in a potentially useful way. It matters in one specific circumstance: a diet built almost entirely on unprocessed grains, legumes and nuts, with marginal zinc and iron intake and nothing to offset it. Soaking cashews two to four hours in warm water activates a little endogenous phytase and leaches some phytate into water that gets discarded, but the effect is modest — nothing like sprouting or long fermentation — and soaking has a better justification anyway, which is softening the kernel for blending. Vitamin C and organic acids at the same meal do more for mineral absorption than soaking does. See also Soaking and Phytic Acid.
How to Buy, Store and Prepare Cashews
Cashews are graded by an international system that is opaque until someone explains it. The letter describes color and form: W means whole white kernels, the top class; S means scorched, heat-darkened and perfectly edible; B means butts and S/S means splits, with piece grades below. The number is kernels per pound: W-180 means about 180 kernels to the pound, so those are the largest, sometimes marketed as the “king of cashews,” while W-210, W-240, W-320 and W-450 get progressively smaller. W-320 fills most retail jars. The buying lesson: pay for size only when size is the point. Whole W-180 or W-210 kernels are worth it as a snack, garnish or gift, but if you are grinding cashews into paste, cream or butter, buy pieces or splits for an identical result at much lower cost.
What to look for
- Smell first, always. Fresh cashews smell faintly sweet and milky. Oxidized ones smell like oil paint, putty or crayon. That smell is unfixable — do not buy, do not eat.
- Buy from high turnover. A busy shop's bulk bin beats a supermarket jar that has sat on a warm shelf for a year; a slow, dusty, unrefrigerated bin in a warm store is the worst possible source.
- Look at the kernels. They should be uniform ivory to pale gold, plump, and unbroken if sold whole. Reject batches with shriveled, discolored, blackened or dark-spotted kernels, or anything musty or moldy — that is the signal for possible fungal contamination and aflatoxin, a documented issue in cashews as in other nuts.
- Plain unsalted kernels are the default purchase. Salted roasted cashews are one of the easiest foods in the world to eat two hundred grams of without noticing; buying them plain and toasting your own is cheaper and self-limiting.
Storage
Nearly 44 percent fat, including around 8 grams of polyunsaturated fat per 100 grams, means oxidation is the enemy. Cashews are more stable than walnuts because their fat is mostly oleic acid, but they are not stable indefinitely.
- Airtight, always — sealed glass jars or heavy bags with the air pressed out. Oxygen and light both drive rancidity.
- Pantry: one to three months in a cool dark cupboard for a jar you are actively eating.
- Refrigerator: about six months — the right default for anything bought in quantity.
- Freezer: a year or more with no meaningful quality loss. Cashews freeze beautifully and can be used straight from frozen for cooking or blending.
- Buy in bulk, then split and freeze. A working jar in the cupboard, the rest in the freezer. That is the whole strategy.
- Keep them away from strong smells. Fat absorbs odors, and cashews stored next to onions or spices will taste like them.
Preparation
Toasting. A dry skillet over medium heat, shaken constantly, four to six minutes until pale gold and fragrant; or a 165 to 175 degree Celsius oven for eight to twelve minutes, stirred once or twice. Remember the sugar: cashews go from pale to burnt faster than almost any other nut and keep browning on the hot pan after you pull them off the heat, so take them a shade lighter than you want and tip them onto a cool plate immediately.
Soaking and cashew cream. Soak two to four hours in cool water, or fifteen to twenty minutes in water just off the boil if you are in a hurry, then drain and discard the water. Blend soaked cashews with fresh water at roughly one part nuts to two parts water for a thick cream, one to three for a pouring cream, one to four or five for a drinkable milk, with a pinch of salt. It thickens further on standing and on heating and, unlike many plant purees, does not split when simmered — which is why it works in sauces and soups. This is the Indian kaju paste technique arrived at from the other direction.
Cashew butter is toasted cashews ground in a food processor, scraping down repeatedly, for five to ten minutes: they pass through a crumbly stage, then a stiff paste, then release their oil and turn glossy. No added oil is needed. As a thickener, add cashew paste to a finished curry, stew or soup base and simmer gently, stirring, because it catches on the pan bottom quickly. As a garnish, fry briefly in ghee, butter or coconut oil with curry leaves or whole spices and scatter over rice, grains or vegetables at the table.
How Much to Eat
A standard serving is 28 to 30 grams — roughly 16 to 18 whole kernels of the common W-320 grade, or a modest cupped handful. That delivers approximately:
- 155 to 165 calories on paper, closer to 135 to 140 as measured metabolizable energy
- about 5 g protein and about 13 g fat, of which roughly 7 g is oleic acid
- about 9 g carbohydrate, including about 1 g fiber
- about 0.66 mg copper — roughly three-quarters of a day's requirement
- about 87 mg magnesium — roughly a fifth of a day's requirement
- about 2 mg iron and 1.7 mg zinc on paper
- roughly 45 to 80 mg oxalate
A reasonable habitual intake for most people is 20 to 40 grams a day, as a snack or worked into cooking. There is no advantage to more, and the calorie density makes more an easy way to drift upward in energy intake without noticing.
What the clinical evidence actually shows
Two things often get blended together in marketing and should be separated. The nut evidence in general is strong: large prospective cohorts and the Mediterranean-diet intervention literature consistently associate regular nut consumption, in the region of 30 grams a day, with lower cardiovascular risk and lower all-cause mortality. That body of work is substantial, and cashews are nuts.
The cashew-specific evidence is thin but not empty. Most controlled trials used mixed nuts, walnuts or almonds, and transferring their results wholesale is not legitimate. A randomized controlled-feeding crossover trial found that substituting cashews for a portion of habitual fat produced small reductions in total and LDL cholesterol. A twelve-week randomized trial in Asian Indians with type 2 diabetes, comparing 30 grams of cashews a day against a matched control diet, found a modest increase in HDL cholesterol and a reduction in systolic blood pressure with no worsening of glycemic control, body weight or waist circumference — the practically useful finding, since the common fear that a starchy, calorie-dense nut will worsen blood sugar or drive weight gain was not borne out at that dose.
The honest summary: cashews are a sound whole food that fits comfortably into a nut habit with good evidence behind it, and they carry an exceptional copper and magnesium payload. They are not a therapy, they do not lower cholesterol dramatically, and no one should eat them for a disease. Eat them because they are food and they are good.
Making the serving size real
- Portion out of the bag, not into your mouth. Cashews are soft and low-friction, and eating from a large container is how a handful becomes two hundred grams.
- Buy them plain. The salt on commercial roasted cashews is what breaks the brakes.
- Use them as an ingredient more than a snack. Twenty grams of cashew paste thickening a curry for four is a better use of the food than a bowl in front of a screen.
- Rotate your nuts. No single nut covers the ground: cashews for copper and magnesium, almonds for vitamin E, calcium and fiber, walnuts for alpha-linolenic acid, pumpkin seeds for zinc and magnesium. A mixed jar solves the problem without any thinking.
Who Should Be Careful
Cashews are an ordinary food for the great majority of people. The exceptions below are specific, and a few are serious.
Tree nut allergy
This is the most important caution on the page. Cashew allergy is one of the more severe tree nut allergies, not one of the milder ones. Reactions occur at low doses, with threshold studies finding that cashew-allergic individuals often react to smaller amounts of protein than peanut-allergic individuals do to peanut. Anaphylaxis is common relative to the number of reactions, with clinical series consistently reporting a high proportion of severe systemic reactions among cashew-allergic children. And the first recognized exposure is often the reaction itself, without a prior mild warning event. The dominant allergen is Ana o 3, a 2S albumin, alongside Ana o 1 (a vicilin) and Ana o 2 (a legumin); Ana o 3 sensitization is the strongest marker of severe clinical reactivity, and it is stable to heat and digestion, so roasting does not defuse it.
Pistachio is the critical cross-reactant. Cashew and pistachio are both Anacardiaceae, their storage proteins are highly homologous, and clinical cross-reactivity between them is far higher than between cashew and unrelated tree nuts, so anyone diagnosed with cashew allergy should be evaluated for pistachio and is usually advised to avoid both. Mango, pink peppercorn and sumac are in the same family; clinically relevant cross-reaction with these is uncommon but reported. Practically: cashew is a frequent hidden ingredient in Indian and Southeast Asian restaurant gravies, pesto substitutions, dairy-free creams and sauces, and confectionery. Because cashew paste dissolves invisibly into a sauce, restaurant questioning has to be explicit. If epinephrine has been prescribed, carry it.
Wilson disease and copper-restricted diets
The cashew's greatest nutritional strength becomes a hard contraindication here. At about 2.2 mg of copper per 100 grams, cashews are among the highest-copper foods in the diet after organ meats, shellfish and cocoa, and they sit on the strict-avoidance list in the copper-restricted diet used in Wilson disease and other inherited copper toxicoses. The same applies to anyone undergoing deliberate copper depletion with zinc, penicillamine or trientine under specialist care. This is not an “in moderation” caution; it is an avoid.
Advanced kidney disease
Cashews carry about 660 mg potassium and 593 mg phosphorus per 100 grams, and in stage 4 to 5 chronic kidney disease and on dialysis nuts are typically restricted for exactly that reason. Two nuances belong to a renal dietitian rather than a web page: much of the phosphorus in nuts is phytate-bound and substantially less bioavailable than the inorganic phosphate additives in processed food, and potassium restriction practice has been evolving. The decision belongs to the care team.
Calcium oxalate stone formers
Covered in detail above. A 30-gram serving can supply most of a restricted day's oxalate allowance. Pair cashews with calcium-containing food, keep fluid intake high, do not restrict dietary calcium, and if you have enteric hyperoxaluria from fat malabsorption, discuss nuts specifically with your clinician.
Residual shell resin, aflatoxin and contamination
Inadequately processed kernels can retain anacardic acid from the shell and cause a urushiol-type contact reaction — burning lips, perioral rash, or a delayed blistering dermatitis. This is rare, and it is a processing failure rather than an immune allergy, so it presents differently. Never handle unshelled cashews, and treat a batch that causes burning rather than itching or swelling as suspect. Separately, cashews like other nuts can be colonized by Aspergillus species that produce aflatoxins, and contamination has been documented in surveys of cashews from several producing regions; occasional recalls for Salmonella in imported nuts have also occurred. The countermeasures are ordinary: buy from reputable, high-turnover sources, store cool, dry and airtight, and discard any kernel that is shriveled, discolored or musty. Do not taste-test to decide.
Phytate in restricted diets
A real concern only for people eating an almost entirely unrefined plant diet with marginal zinc and iron intake, and cashews are relatively low in phytate for a nut. Vitamin C at the same meal and variety across the week solve this more effectively than soaking does.
Medication considerations
These are genuinely modest, and inflating them would be dishonest. Four are worth knowing:
- Warfarin. Cashews carry about 34 micrograms of vitamin K per 100 grams — low to moderate, nothing like leafy greens. The principle for anyone on warfarin is consistency, not avoidance: a stable habitual intake of vitamin K allows a stable dose. Suddenly starting or stopping a large daily cashew habit is worth mentioning to whoever manages your INR.
- High-dose zinc supplements. The interaction runs in the direction that favors cashews: zinc blocks copper absorption, and copper-rich food is the counterweight. The exception is anyone using zinc therapeutically to deplete copper, for whom cashews defeat the purpose.
- Levothyroxine and other empty-stomach drugs. Fat and fiber slow gastric emptying and can blunt absorption. This is generic to any fatty food rather than specific to cashews — take the medication on an empty stomach and separate it from food by the interval your pharmacist specifies.
- Divalent-mineral chelation. Calcium, magnesium, iron and zinc supplements chelate tetracycline and fluoroquinolone antibiotics and reduce their absorption. Whether a food-level mineral load does this to a clinically meaningful degree is much less established, and the honest answer is that the evidence is weak. An hour of separation is a low-cost precaution rather than a documented necessity.
One note on the cashew apple: feni and cashew wine are alcoholic beverages and carry all the ordinary considerations of alcohol, and none of this page's nutritional content transfers to them. Fresh cashew apple juice is a different matter and a genuinely good source of vitamin C where it is available.
