Sorrel: Nutrients and Culinary Use
The plant on this page is garden sorrel, Rumex acetosa, together with its close culinary relative French sorrel (Rumex scutatus). Almost every nutrition claim you will read about sorrel is built on a quiet sleight of hand: it quotes the nutrient content of 100 grams of leaf. One hundred grams of sorrel is a very large amount — a packed bowl of raw leaves, or a full portion of soup made almost entirely of sorrel. Nobody eats a herb that way, and given its oxalate content, nobody should eat it that way every day. This page does the arithmetic for the amounts people actually eat, which turns "excellent source of vitamin C and magnesium" into something considerably more modest and considerably more honest. It then gets on with the part sorrel is genuinely brilliant at, which is flavor.

What Is Actually in a Sorrel Leaf
Sorrel is, compositionally, a normal dark leafy green with an unusual amount of organic acid. It is mostly water. Reference food-composition databases such as USDA FoodData Central list raw sorrel (catalogued there under "dock" as well as "sorrel") at roughly 20–25 kilocalories per 100 g, with about 2 g of protein, negligible fat, a few grams of carbohydrate and a useful amount of fiber.
Its micronutrient profile, per 100 g of raw leaf and rounded, runs approximately:
- Vitamin C: on the order of 45–50 mg
- Vitamin A activity from carotenoids: on the order of 200 micrograms RAE (retinol activity equivalents)
- Magnesium: on the order of 100 mg
- Potassium: on the order of 390 mg
- Calcium: on the order of 45 mg — but see the oxalate discount below
- Iron: on the order of 2 mg — same caveat
Treat all of these as ballpark figures. Leafy-green composition varies substantially with cultivar, season, soil, leaf age and how long the bunch has sat in a refrigerator, and vitamin C in particular falls with storage and heat. The point of the numbers is not precision; it is scale.
Alongside the vitamins and minerals, sorrel contains the plant chemistry typical of the genus Rumex: polyphenols, flavonoids, tannins, anthraquinone derivatives, and — the defining component — a large amount of oxalic acid and its salts. Reviews of the genus, notably the 2015 Journal of Ethnopharmacology review by Vasas and colleagues, describe this chemistry in detail and are careful to note that the pharmacological findings attached to it are laboratory and animal work rather than human trials.
Portion Arithmetic: The Handful, Not the 100 Grams
Here is the calculation that most sorrel articles skip. Sorrel leaves are light. Some working estimates:
- A few torn leaves as a salad accent: roughly 5–10 g.
- A generous handful stirred into eggs or a grain bowl: roughly 20–30 g.
- A full serving of traditional sorrel soup: can genuinely reach 75–150 g of leaf per bowl, because sorrel collapses to almost nothing when cooked. This is the one common preparation where the 100 g figure is realistic — and, not coincidentally, the one preparation implicated in the poisoning case reports.
Run the vitamin C figure through those portions, against a reference daily value of about 90 mg for adults:
- 10 g salad accent: about 5 mg of vitamin C — roughly 5% of the daily value. Pleasant, not important.
- 30 g handful: about 14 mg — roughly 15%. Now it is a real contribution, on the order of a small piece of fruit.
- 100 g soup portion: about 48 mg on paper — over 50% — except that vitamin C is heat-labile and water-soluble, so a long simmer destroys much of it and the rest leaches into the broth. If you drink the broth you keep some; if you boil hard and discard the water (which is the standard advice for reducing oxalate), you lose most of it. There is no version of this where you get both the maximum vitamin C and the minimum oxalate.
The same arithmetic applied to magnesium is more deflating still. A 30 g handful supplies about 30 mg of magnesium against a daily value near 420 mg — about 7% — and part of even that is bound up by the leaf's own oxalate. Sorrel is not a magnesium strategy. Magnesium comes from nuts, seeds, brown rice, beans and dark leafy greens eaten in quantity, not from a herb used by the handful.
Vitamin C: The One Real Nutritional Claim
Evidence tier: established nutrition, plus a historically documented use.
Of everything claimed for sorrel, the vitamin C story is the one that holds up, because it does not depend on any special property of the plant — only on the fact that fresh green leaves contain vitamin C and that sorrel is eaten fresh.
The historical context is real. Before year-round produce, late winter and early spring were the lean season for vitamin C in northern Europe, and scurvy — frank vitamin C deficiency, with bleeding gums, poor wound healing and profound fatigue — was a recognized seasonal problem, not only a sailors' disease. Sorrel is one of the earliest edible green leaves to appear, it is eaten raw or briefly wilted rather than boiled to death, and it is intensely sour, which reads as "fresh." Tart spring greens were valued as an antiscorbutic for good reason. Reviews of the history of scurvy, such as the 2011 European Journal of Internal Medicine paper by Magiorkinis and colleagues, set out that seasonal pattern.
What this does not mean, for a modern reader with a refrigerator:
- It does not make sorrel a superior vitamin C source. Per gram it is nowhere near citrus, peppers, blackcurrants, broccoli or kale, and you eat far less of it.
- It does not survive concentration into a supplement, because vitamin C degrades in processing while oxalate does not.
- It does not extend to any of the wider claims made for high-dose vitamin C. Those belong on the Vitamin C page and have nothing to do with sorrel.
The honest framing: eat sorrel raw or lightly cooked and you get a modest, genuine dose of vitamin C alongside the flavor you actually came for.
Carotenoids and Vitamin A
Evidence tier: established nutrition; benefit claims beyond basic nutrition are preliminary.
Like most deep-green leaves, sorrel contains beta-carotene and related carotenoid pigments — provitamin A compounds the body converts to retinol as needed — plus lutein and zeaxanthin, which are concentrated in the retina. The green of chlorophyll masks the orange-yellow of the carotenoids underneath, which is why leafy greens are respectable vitamin A sources despite looking nothing like carrots.
Two practical notes:
- Carotenoids are fat-soluble. Absorption improves markedly when the leaf is eaten with fat. Traditional sorrel preparations — butter, cream, olive oil, egg yolk, oily fish — do this automatically. This is one of several places where classic recipes turn out to be nutritionally sensible.
- Carotenoids are far more heat-stable than vitamin C. Cooking sorrel destroys the vitamin C and leaves the carotenoids largely intact, so the nutrient you keep depends on how you cook.
Portion arithmetic again: a 30 g handful supplies roughly 60 micrograms RAE against a daily value near 900, so about 7%. A contribution, not a source.
Magnesium, Potassium and the Oxalate Discount
Evidence tier: established food composition, with an established absorption caveat.
On paper sorrel looks mineral-rich: about 100 mg of magnesium and 390 mg of potassium per 100 g, plus calcium and iron. Two corrections have to be applied before any of that means much.
Correction one: the portion
Divide everything by three to ten for a realistic serving. A handful of sorrel delivers single-digit percentages of the daily value for every mineral it contains. Potassium is the starkest: 30 g of sorrel gives about 120 mg against a daily value of 4,700 mg — under 3%. A banana, a potato or a bowl of beans is a different order of magnitude.
Correction two: the oxalate discount
Oxalate binds divalent minerals — calcium above all, and to a lesser extent iron and magnesium — into poorly soluble complexes in the gut. In a high-oxalate leaf, a meaningful share of the calcium and iron listed on the label is already spoken for by the plant's own oxalate and is not available to you. This is the same phenomenon that makes spinach a much worse calcium and iron source than its raw numbers suggest, discussed in detail on Iron Absorption and Oxalates, and in the kale context on Oxalates and Cooking.
So the honest reading of sorrel's mineral column is: the calcium and iron figures should be heavily discounted, the magnesium and potassium figures are real but the portions are small. Do not count sorrel toward a mineral target.
The Nutrient-Versus-Oxalate Trade-Off
There is a structural tension in sorrel that is worth stating plainly, because it explains why this site does not recommend eating more of it to get more nutrition.
Every nutrient in sorrel arrives packaged with oxalate, and the ratio does not improve with quantity. Doubling your portion to double the vitamin C also doubles the oxalate load. Every other vitamin C source on the shelf — citrus, peppers, berries, broccoli, cabbage — delivers the same vitamin without the oxalate. There is no nutrient in sorrel that is not more cheaply and safely obtained elsewhere.
Which leads to the recommendation this whole page is built toward: eat sorrel for flavor, in flavoring amounts, and get your nutrition from foods you eat by the plateful. That is not a grudging concession. It is what the herb is for. The rest of this page treats it accordingly.
Flavor Chemistry, and Why the Green Fades
Sorrel's sourness is oxalic acid and its salts, plus other organic acids, in unusually high concentration for a leaf. That is the whole trick. It is the only common leafy green that can substitute for lemon juice, because it brings its acid as a leaf you can wilt, purée or scatter raw. Cooks describe the flavor as lemon crossed with green apple, with a faintly mineral, grassy back-note.
Two things happen at the stove that surprise first-time users:
- The color collapses instantly. Within seconds of heat, brilliant green turns drab olive-khaki. This is straightforward chemistry: acid displaces the central magnesium ion from chlorophyll, converting it to pheophytin, which is brown-olive. Sorrel is acidic enough to do this to itself the moment its cells break down. It is completely normal and does not mean the sorrel has spoiled or that you have ruined it. Nothing prevents it — not blanching, not lids, not baking soda (which would also destroy the flavor). Cooks who want green on the plate stir a little raw sorrel in at the very end, or accept the olive and serve it in a soup where the color reads as rustic rather than sad.
- The leaf melts. Sorrel has little structure to lose. A large panful wilts to a couple of spoonfuls of purée in under two minutes. Plan quantities accordingly, and add it late.
One equipment note that follows from the acidity: use non-reactive cookware — stainless steel, enamel, glass or a well-seasoned pan. Bare aluminum, unlined copper and raw cast iron will react with sorrel's acid and can give a metallic taste and a grey cast.
Cooking with Sorrel
Think of sorrel as a seasoning that happens to be a vegetable. Its jobs:
- Acidity in place of lemon. Anywhere a dish needs brightening — potatoes, eggs, beans, lentils, brown rice, roast vegetables — a spoonful of sorrel purée does the work of a squeeze of citrus with more body.
- A cutting agent for rich food. Its classic partners are fatty: butter, cream, egg yolk, and oily fish such as salmon, mackerel and herring. The acid slices through fat the way a squeeze of lemon does at the table.
- Raw accent in salads. A few young leaves torn through a green salad remove the need for any other acid in the dressing. Because raw sorrel is aggressively sour, keep it to a minority of the bowl — and remember that raw is the highest-oxalate way to eat it.
- Melted into sauces and soups. The traditional use, and the one that consumes real quantity. See the portion caution above.
- Folded into eggs. Sorrel omelets and scrambled eggs are a classic; the egg's fat carries the carotenoids and its calcium content helps with the oxalate.
A simple sorrel purée, which is the most useful form to have in the refrigerator: melt a knob of butter in a stainless pan, add washed shredded sorrel off a low heat, stir for a minute until it collapses, season, and cool. It keeps a few days and freezes well — freezing is genuinely worthwhile because the color and texture are already gone, so nothing is lost.
Sorrel Soup, and Why the Cream Was Always Right
Sorrel soup exists in a dozen national versions: soupe à l'oseille in France, zupa szczawiowa in Poland, shchav and green borscht across the Slavic world, and countless household variants. Nearly all of them share three features, and all three turn out to matter:
- They are built on potato or another starch. This dilutes the sorrel — the soup is not pure sorrel — and gives body without acid.
- They finish with dairy: cream, sour cream, milk, or a swirl of yogurt. This is not only for richness. Calcium eaten in the same meal as oxalate binds it in the gut, forming an insoluble complex that is excreted rather than absorbed. Prospective cohort research on kidney-stone risk — notably work by Curhan and colleagues in Annals of Internal Medicine in 1997 — found that dietary calcium consumed with food was associated with lower, not higher, stone risk, which is exactly this mechanism. The traditional recipe was doing oxalate management centuries before anyone measured it.
- They often include a hard-boiled egg. More fat for the carotenoids, more protein, more dilution of the acid.
Two modern additions to the tradition, both from the safety side rather than the kitchen:
- Do not make it a repeated main dish. A bowl of sorrel soup is the single largest sorrel serving most people will ever eat. Occasional is fine for a healthy person; a spring ritual is fine. A daily or near-daily bowl of leaf-heavy soup is the intake pattern the case reports describe, and anyone with kidney-stone history should not be eating it at all without medical advice.
- Consider blanching and discarding the first water if you are making a leaf-heavy version. Boiling and draining reduces soluble oxalate meaningfully — the cooking-method studies of Chai and Liebman and of Savage and colleagues quantified this across vegetables — at the cost of some vitamin C and some flavor. It is a trade, and for a large portion it is usually the right one.
Pairings That Work
Nearly every good sorrel pairing is either fat, starch or calcium — which is to say, nearly every good sorrel pairing also happens to reduce its downside.
- Dairy: butter, cream, sour cream, cheese, yogurt, milk. Best pairing on every axis: flavor, carotenoid absorption and oxalate binding.
- Eggs: omelets, scrambles, a boiled egg in soup, hollandaise-adjacent sauces.
- Oily fish: salmon, trout, mackerel, herring. The classic.
- Potatoes and brown rice: starch to carry and dilute the acid; sorrel purée through brown rice is excellent.
- Beans and lentils: sorrel brightens earthy legumes the way lemon or vinegar does.
- Butter-braised or roasted root vegetables: a spoonful of purée at the end.
- Fresh herbs: chives, chervil, parsley, dill and tarragon all sit well alongside it.
Buying, Storing and Growing
Sorrel is rare in supermarkets for a simple reason: the leaves are thin, water-rich and highly perishable, and they do not survive a distribution chain. Farmers' markets, greengrocers with a local supply, and your own garden are the realistic sources.
Selecting
- Look for bright, crisp, unblemished leaves with no yellowing and no sliminess. Sorrel deteriorates fast and visibly.
- Younger, smaller leaves are more tender and slightly less aggressive; large old leaves are tougher, sharper and often need their central rib stripped out.
- Avoid any bunch that has begun to flower-stalk; the plant diverts from leaf and the remaining leaves toughen.
Storing
- Treat it like a delicate herb, not like a cabbage. Wrap unwashed leaves loosely in a damp cloth or paper towel, bag them, and refrigerate. Use within two or three days.
- Freeze as purée. Wilt in butter first, cool, and freeze in small portions or an ice-cube tray. Because sorrel's color and texture are lost the instant it is cooked anyway, frozen sorrel purée is barely distinguishable from fresh-cooked — this is the one green where freezing costs you almost nothing.
Growing
- Sorrel is a tough, cold-hardy perennial and one of the easiest edible plants to keep. It tolerates partial shade and comes back for years.
- Harvest outer leaves young and often and remove flower stalks as they appear; this keeps the plant producing tender leaves through the season.
- It self-seeds readily and can become a nuisance in a small bed — deadhead if you do not want a patch.
- A single established plant supplies more sorrel than most households can sensibly eat, which is a nice problem: give it away rather than eating more of it than you should.
An Honest Nutritional Verdict
Putting it together:
- Sorrel is a legitimate but minor source of vitamin C when eaten raw or lightly cooked, and it earns its historical antiscorbutic reputation. In flavoring portions that means roughly 5–15% of a day's vitamin C.
- It contributes small amounts of carotenoids, magnesium and potassium — single-digit percentages of the daily value per handful.
- Its calcium and iron content should be discounted, because its own oxalate binds them.
- It is not a superfood and it is not a nutritional strategy. Nothing in it is unavailable elsewhere in a better package.
- It is an outstanding flavoring herb — genuinely irreplaceable if you want acid delivered as a leaf.
- The oxalate load rises with every gram you eat, so "eat more for the nutrition" is precisely the wrong conclusion. Read the oxalate and kidney-risk page.
None of that is a criticism of sorrel. It is a description of what a herb is.
