Which Sorrel Do You Mean? Three Different Plants
"Sorrel" is one of the most overloaded plant names in the English language. It is attached to at least four unrelated or only distantly related plants, sold in different aisles, brewed in different ways, and carrying different safety profiles. If you searched for "sorrel tea benefits" you were probably looking for the deep-red Caribbean drink made from Hibiscus sabdariffa — a plant with real randomized blood-pressure trials behind it. If you searched for "sorrel soup" or "sorrel leaves," you meant garden sorrel, Rumex acetosa — a tart leafy green that is high in soluble oxalate and has caused documented poisonings when eaten in enormous quantity. Handing a reader information about one when they came for the other is not a pedantic mix-up. It is a safety failure. This page sorts them out.

Why One Name Covers Four Plants
The word sorrel comes from an old Germanic root meaning sour, by way of Old French surele. It was never a botanical name. It was a description of a taste. Any leaf sharp enough to make you pucker could earn it, and across centuries and continents several unrelated sour-tasting plants did.
Two separate chemistries produce that sourness, and this is the key to the whole tangle:
- Oxalic acid gives the sourness of Rumex sorrels (garden, French, sheep's) and of Oxalis wood sorrel. Oxalic acid is the compound behind the oxalate safety concern that dominates these pages. The genus name Oxalis and the word oxalate share the same Greek root, oxys, meaning sharp or acid — the plant gave the chemical its name, not the other way round.
- Organic fruit acids — mainly citric, malic and hibiscus acid — plus anthocyanin pigments give the sourness and the deep ruby color of Hibiscus sabdariffa, the roselle. Roselle is not notably high in oxalate, and its safety profile is a completely different conversation.
So the naming problem is not merely a labeling nuisance. Two of the plants called sorrel are sour because of the compound you might need to restrict; one of them is sour for entirely unrelated reasons. A reader on a low-oxalate diet who is told "sorrel is high in oxalate" and therefore avoids their Christmas hibiscus drink has been misinformed in one direction. A reader who is told "sorrel tea lowers blood pressure" and starts drinking strong daily infusions of Rumex acetosa leaf has been misinformed in the far more dangerous direction.
Garden or Common Sorrel — Rumex acetosa
This is the plant this Benefits section is about.
Garden sorrel, also sold as common sorrel or simply "sorrel" at farmers' markets in Europe and North America, is a hardy perennial in the Polygonaceae — the buckwheat and dock family. Its closest kitchen relative is rhubarb, and its wild cousins are the broad-leaved docks you see on roadsides. It grows as a low rosette of long, arrow-shaped (technically sagittate) bright green leaves, with two backward-pointing lobes at the base of each leaf where it meets the stalk. In summer it throws up a tall reddish flowering spike.
The flavor is vivid, clean and unmistakably lemony, with a green edge. It is the sorrel of:
- Sorrel soup — the spring soup found across France, Poland, Ukraine, Russia and Lithuania under names including soupe à l'oseille, zupa szczawiowa, green borscht and shchav.
- French sorrel sauce for fish, classically with salmon, where the acidity cuts the oil.
- Raw accents in salads, used a few torn leaves at a time rather than by the bowl.
Safety headline: Rumex acetosa leaf is among the higher-oxalate foods in the human diet, sitting in the same category as spinach, rhubarb, beet greens and Swiss chard. Analyses of the Polygonaceae have repeatedly placed sorrel at the top end of the measured range for leafy vegetables, and the medical literature contains case reports of severe and fatal acute oxalate poisoning after ingestion of very large quantities of sorrel leaf, typically as soup. French Sorrel — Rumex scutatus
French sorrel is a lower, more sprawling perennial with smaller leaves shaped like a shield or a fiddle rather than an arrow — the species name scutatus means "shielded." It is generally milder and considered more refined than garden sorrel, which is why it is the sorrel most associated with classical French cooking. Some markets sell it as "buckler-leaf sorrel."
For every practical purpose on this site, French sorrel behaves like garden sorrel: same family, same oxalic-acid sourness, same oxalate caution, same culinary uses. Where the two are distinguished in cooking, it is on intensity and leaf texture rather than on safety. Reported oxalate values differ between analyses and between growing conditions, but not by enough to make one a "safe" version of the other. Treat any Rumex sorrel as a high-oxalate leaf.
Sheep's or Red Sorrel — Rumex acetosella
Sheep's sorrel, also called red sorrel, field sorrel or sour weed, is a small wiry Rumex that colonizes poor, acidic, disturbed ground. Its leaves are much smaller than garden sorrel's and the basal lobes flare outward, giving a little arrowhead or almost antler-like silhouette. In late spring whole patches turn rusty red as it flowers, which is where "red sorrel" comes from. In much of North America and Australia it is classed as an introduced weed.
It is edible and tart, and foragers do eat it. Two things are worth knowing:
- The oxalate concern is the same. It is a Rumex, sour for the same reason, and small leaves are easy to eat in surprising quantity when grazing a patch. Foraged bulk eating is one of the two exposure patterns of real concern.
- It is one of the four core herbs in the Essiac formula, alongside burdock root, slippery elm bark and Turkish rhubarb root. Essiac has been marketed for decades as an alternative cancer remedy. There is no reliable clinical evidence that it treats, cures or slows cancer, and a human study in women with breast cancer found no improvement in quality of life among users. Jamaican Sorrel and Sorrel Drink — Hibiscus sabdariffa
This is a different plant in a different family, and it is very often the one people are actually searching for.
Across Jamaica, Trinidad, Guyana, Barbados and the wider Caribbean, "sorrel" means the fleshy crimson calyces — the cup of sepals around the seed pod — of Hibiscus sabdariffa, the roselle, a member of the mallow family (Malvaceae). Steeped with ginger, cloves, cinnamon and orange peel, sweetened, and often laced with rum, sorrel drink is the Christmas beverage of the region. The same plant is agua de Jamaica in Mexico, karkade in Egypt and Sudan, bissap in Senegal, and "hibiscus tea" or "sour tea" on the supermarket shelf.
It has nothing botanically to do with Rumex. Its sourness is fruit acids, not oxalic acid. And it is the sorrel with the strongest human clinical evidence attached to it:
- Blood pressure — randomized clinical trial evidence. Multiple randomized controlled trials of Hibiscus sabdariffa tea and extract in people with prehypertension or mild hypertension have reported modest reductions in systolic and diastolic blood pressure, and these have been pooled in systematic reviews and meta-analyses of randomized trials. The effect sizes are modest and the trials are mostly small and short, but this is genuine randomized human evidence, not folklore.
- Cholesterol and metabolic markers — mixed, weaker. Trials of hibiscus on lipids and glucose exist but are less consistent.
Every one of those findings belongs to Hibiscus sabdariffa and to no Rumex species. There is no randomized trial evidence that garden sorrel lowers blood pressure. If a page, product or video cites blood-pressure trials while showing arrow-shaped green leaves, the citation has been attached to the wrong plant.

Wood Sorrel — Oxalis Species
Wood sorrel is any of a large number of Oxalis species — commonly Oxalis acetosella in European woodland, Oxalis stricta and Oxalis corniculata as garden and pavement weeds worldwide. It is in the Oxalidaceae, unrelated to both Rumex and Hibiscus.
It looks nothing like garden sorrel. The leaves are three heart-shaped leaflets on a thin stalk, clover-like enough that people regularly mistake it for clover, with small five-petalled yellow, white or pink flowers. The taste is sharply lemony — foragers nibble it, and it is a classic wild-food nibble for children learning plants.
It is also oxalate-rich, by definition and by name. Livestock poisonings from heavy grazing of Oxalis are documented in the veterinary literature. For a human, a few leaves are a pleasant sour snack; a large foraged salad is not a good idea, and the same cautions that apply to Rumex sorrel apply here. Wood sorrel is not the subject of these pages, but it belongs in the naming map because a reader who has been chewing "sorrel" from the lawn deserves to know which risk column it sits in.
Telling Them Apart
You will almost never encounter two of these at once, because they arrive by different routes: garden sorrel from a market or garden bed, roselle from a dried-goods aisle or a Caribbean grocery, wood sorrel from the ground under your feet. But when a recipe or a label is ambiguous, these are the tells.
By what you are holding
- Long green arrow-shaped leaves, lobes pointing back down the stalk, in a loose rosette — garden sorrel, Rumex acetosa.
- Small rounded shield- or fiddle-shaped green leaves on a sprawling low plant — French sorrel, Rumex scutatus.
- Small narrow arrowheads with outward-flaring lobes, wiry stems, patches turning rust-red — sheep's sorrel, Rumex acetosella.
- Three heart-shaped leaflets, clover-like, small five-petalled flowers — wood sorrel, Oxalis.
- Dried or frozen deep-red fleshy cups, no leaves at all, sold in bags or already bottled — roselle, Hibiscus sabdariffa.
By the context of the recipe
- Soup, sauce, omelet, purée, "wilt the leaves," green color turning olive when cooked — Rumex.
- Steeped, strained, sweetened, served cold, ginger and cloves, ruby red, Christmas, rum — Hibiscus sabdariffa.
- "Sorrel tea" is ambiguous and is the single most common point of confusion. In Caribbean and diaspora usage it means hibiscus. In some herbal-supplement usage it means an infusion of Rumex leaf. Find out which before drinking it daily.
Different Plants, Different Risk Profiles
This is the section that makes the naming problem a safety problem rather than a trivia problem.
Rumex sorrels and Oxalis wood sorrel
The dominant issue is soluble oxalate. Oxalate binds calcium; in the gut that reduces mineral absorption, and in the urinary tract absorbed oxalate can combine with calcium to form calcium-oxalate crystals, the commonest kind of kidney stone. At extreme intakes, oxalate can crystallize inside the kidney tubules themselves and cause acute oxalate nephropathy, which is an emergency, not a nuisance. Documented human fatalities exist from massive single ingestions of sorrel leaf. People with a history of calcium-oxalate stones, with chronic kidney disease, with gout, or on a prescribed low-oxalate diet should treat these plants as foods to limit.
Hibiscus sabdariffa (Caribbean sorrel drink)
Oxalate is not the headline issue. The cautions that come up in the hibiscus literature are different ones: possible additive effect with blood-pressure medication, interactions reported with some drugs, avoidance of concentrated medicinal doses in pregnancy, and the fact that commercial sorrel drink is usually heavily sweetened, which is its own metabolic consideration. Two plants, one name, two entirely separate risk conversations. That is why every page in this section names its plant in the first paragraph.

Evidence Tiers, Plant by Plant
This site labels the strength of evidence behind every claim. Applied to the sorrels:
- Randomized clinical trial evidence — Hibiscus sabdariffa only. Modest blood-pressure lowering in prehypertensive and mildly hypertensive adults, pooled across small randomized trials in published meta-analyses. Weaker and less consistent trial data on lipids and glucose.
- Preliminary laboratory and animal evidence — the Rumex genus. Reviews of Rumex describe polyphenols, flavonoids, tannins and anthraquinones with antioxidant and antimicrobial activity in test-tube and animal models. This is chemistry shared with many edible plants. It is a reason to study the genus, not evidence that eating the leaf treats anything.
- Traditional use only — most of what is claimed for garden sorrel. Spring tonic, folk diuretic, digestive bitter, topical poultice, scurvy prevention. The scurvy use has a real nutritional basis (the leaf genuinely contains vitamin C); the rest is a record of what people believed and did.
- Documented harm — the Rumex oxalate literature. Case reports and forensic reviews of acute oxalate poisoning and oxalate nephropathy after large ingestions, plus prospective cohort evidence linking dietary oxalate to kidney-stone risk. Note the asymmetry: the harm evidence for garden sorrel is stronger than the benefit evidence.
- No credible clinical evidence — Essiac (containing sheep's sorrel) as a cancer treatment. Laboratory antioxidant work exists; the human data do not support the cancer claims.
Reading Labels and Recipes Without Getting Fooled
A few habits that resolve nearly every ambiguity:
- Look for a Latin binomial. Any reputable supplement, seed packet or serious herbal reference gives one. Rumex acetosa, Rumex scutatus, Rumex acetosella, Oxalis something, or Hibiscus sabdariffa settles the question instantly. A product that says only "Sorrel Extract" with no species is telling you the manufacturer either does not know or does not care.
- Look at the plant part. Leaf means Rumex or Oxalis. Calyx, "flower," or "sepals" means roselle. Root in a sorrel context usually means a dock species or Turkish rhubarb, not culinary sorrel.
- Look at the color of the finished thing. Deep magenta-to-ruby infusion is roselle anthocyanin. Rumex cooks down to olive-khaki and makes a green or greenish-brown soup.
- Distrust a claim that crosses plants. Blood-pressure trials belong to hibiscus. Oxalate warnings belong to Rumex and Oxalis. If one page gives you hibiscus benefits with Rumex photographs, or reassures you that "sorrel" is low in oxalate while selling you leaf capsules, close the page.
- When in doubt about a leaf, assume high oxalate. That is the conservative error, and for anyone with kidney history it is the only sensible default.
