Savory: Summer vs Winter, Carvacrol and Safety
Two distinctions do most of the work in understanding savory, and popular writing about the herb usually collapses both of them. The first is which savory — summer savory, Satureja hortensis, is a mild annual, and winter savory, Satureja montana, is a sharp perennial, and their essential oils genuinely differ. The second is which preparation — a pinch of dried leaf and a capsule of standardised essential oil differ in carvacrol content by roughly two orders of magnitude, which means every safety statement about savory has to say which one it is about.
This page keeps both distinctions in front of you and does the arithmetic rather than asserting it. The short version: the herb, used as a seasoning or a tea, is about as safe as culinary herbs get. The concentrated essential oil is a potent, membrane-active, irritant material that should never be swallowed undiluted and needs heavy dilution even on skin. Those are not two positions on the same substance; they are accurate descriptions of two different substances that share a name.

Two Different Plants, One Name
Both belong to the genus Satureja in the mint family, Lamiaceae, and both are native to the warm, rocky Mediterranean. There the resemblance stops being the useful part.
Summer savory — Satureja hortensis
- Annual, grown from seed each year, soft-stemmed, dying back at the first frost.
- Leaves narrow, soft, greyish-green; the whole plant fairly lax and open.
- Flavour milder, sweeter, rounder — usable generously without dominating.
- This is the culinary savory: the one dried into jars, the German Bohnenkraut, the herb of the bean and lentil tradition.

Winter savory — Satureja montana
- Perennial subshrub, woody at the base, semi-evergreen, surviving frost and cropping for years.
- Leaves smaller, stiffer, darker, more leathery, needle-like on older growth.
- Flavour sharper, more resinous, more pungent — close to a peppery thyme with a hint of pine. Use less.
- Generally the higher-carvacrol species and the one that dominates the antimicrobial literature.
- Better suited to long braises and fatty meats, where a tender annual would vanish.
Why this is load-bearing rather than pedantic: a claim sourced from a S. montana oil study, applied to a jar of S. hortensis leaf, has crossed both distinctions at once — wrong species and wrong preparation. That double jump is the standard way an inflated savory claim gets built.
One further warning about the search results. A third group of Satureja species — especially the Iranian endemic S. khuzistanica, plus S. bachtiarica, S. thymbra and others — is heavily researched and is not either kitchen savory. Some carry extraordinarily carvacrol-dominant oils. If a savory statistic online has no binomial attached, one of these is a plausible source.
Telling Them Apart, in the Garden and the Jar
In the garden the distinction is easy: if it survived the winter and has woody stems, it is winter savory. Summer savory is soft all the way down and has to be resown.
In the jar it is harder, and here the label is the only real evidence. Points worth knowing:
- Most dried "savory" sold in Europe and North America is summer savory, because it dries better and tastes milder.
- A good label carries the binomial. If it says only "savory," you are probably holding summer savory, but you cannot be certain.
- Winter savory tends to look darker and coarser, with stiffer leaf fragments and a sharper, more resinous smell when rubbed.
- For essential oil, the binomial is not optional. Oil sold as "savory oil" without a species name should not be used at all — you do not know which plant it came from or what its carvacrol content is.
In cooking the two are broadly interchangeable if you adjust quantity: use noticeably less winter savory, and add it earlier so the woody leaf can soften.
What Is Actually in the Oil
Savory's flavour and its studied biology both come mostly from the essential oil, the volatile fraction held in glands on the leaf surface. Its main constituents:
- Carvacrol — the dominant pungent monoterpene phenol in most savory oils, and the compound to which nearly all the antimicrobial and antioxidant activity is attributed.
- Thymol — carvacrol's isomer, differing only in where the hydroxyl group sits on the ring. The signature phenol of thyme, present in savory in varying amounts.
- p-Cymene and γ-terpinene — biosynthetic precursors of the two phenols, much weaker on their own, though p-cymene appears to help carvacrol partition into membranes.
- Linalool, borneol, α-terpineol, caryophyllene and others — minor components that shape aroma more than activity.
Alongside the volatile oil, the leaf holds water-soluble polyphenols, chiefly rosmarinic acid, the caffeic-acid ester common across the mint family. This matters practically: a water infusion extracts mostly rosmarinic acid and other polyphenols and relatively little carvacrol, because carvacrol is poorly water-soluble and volatile. Savory tea and savory essential oil therefore deliver substantially different chemistry, which is a third distinction on top of species and preparation.

Why Two Jars of Savory Are Not the Same
Composition studies of the genus consistently find wide variation, and the sources of it are well characterised:
- Species — the largest single factor. Carvacrol has been reported anywhere from a minor component to well over half the oil, depending on which Satureja was analysed.
- Chemotype — within S. montana particularly, populations differ enough that carvacrol-rich, thymol-rich and even linalool-rich forms have been described. Two botanically identical plants can yield chemically distinct oils.
- Geography and climate — altitude, soil, drought and sun exposure all shift the phenol fraction. Hot, dry, stressed conditions tend to favour higher phenol content.
- Harvest timing — oil yield and phenol proportion change through the season, usually peaking around flowering.
- Drying and storage — the aromatics are volatile. Slow, warm or open drying loses them, and so does a jar left open or kept above the stove.
- Distillation method — steam versus hydrodistillation, and the duration, alter the recovered profile.
Two consequences. First, there is no such thing as "the" carvacrol content of savory, which is why this page uses ranges. Second, the practical one: buy small quantities of dried leaf, keep the jar closed, dark and cool, and replace it when rubbing a pinch no longer produces a strong peppery smell. Aroma is the honest test of whether anything active survives.

Carvacrol: the Molecule Doing the Work
Carvacrol is the reason savory is pharmacologically interesting, and also the reason savory is not pharmacologically special.
What it does. Carvacrol dissolves into lipid membranes, expands and destabilises them, and makes them leak protons and ions. In a bacterium, that collapses the energy gradient the cell lives on. The mechanism was nailed down by capping the phenolic hydroxyl group and watching the activity disappear — The phenolic hydroxyl group of carvacrol is essential for action against the food-borne pathogen Bacillus cereus (Ultee and colleagues, Applied and Environmental Microbiology, 2002). Why that is also the safety story. A compound that works by making lipid membranes leaky cannot be selective about which membranes. Human mucous membranes — mouth, throat, oesophagus, stomach, eyes, nose, genital tissue — are the tissues most exposed and least protected, which is exactly where undiluted phenolic oils cause burning, inflammation and, at sufficient exposure, chemical burns. The irritancy is not a side effect that happens to accompany the antimicrobial action; it is the same action applied to your own cells.
Why savory is not special. Carvacrol is shared with oregano, thyme and several other Lamiaceae herbs. So savory's headline activity is a property of a molecule it happens to contain, and much of the literature people cite as savory research is research on that molecule — often synthetic, often pure. What happens to it in the body. Swallowed carvacrol and thymol are absorbed and then rapidly conjugated — glucuronidated and sulfated in the gut wall and liver — and excreted, largely as those conjugates in urine. Free plasma concentrations are low and short-lived. This is central to reading in-vitro results: a concentration that kills bacteria in a dish is not a concentration the bloodstream reaches, however much you eat. The Oil Is Not the Herb: the Arithmetic
Rather than assert that culinary and supplement exposures differ, here is the calculation. Assumptions are stated; they are order-of-magnitude estimates from the ranges in the literature, not precise values for any particular product.
Starting figures
- Dried savory leaf yields roughly 0.5–2% essential oil by weight.
- A level teaspoon of dried crumbled leaf is roughly 1 gram.
- Carvacrol is taken as 40–60% of the oil — a common range, though as noted above it varies widely.
- A drop from a standard essential-oil dropper is roughly 0.03–0.05 mL, about 30–50 mg.
A culinary serving
- 1 g dried leaf × 0.5–2% = 5–20 mg of essential oil.
- × 40–60% carvacrol = about 2–12 mg of carvacrol per teaspoon of dried leaf.
- Divided across four servings of a bean pot: roughly 0.5–3 mg of carvacrol per person.
- And that is before accounting for what boils off during cooking, which for a volatile aromatic is a real loss.
One drop of essential oil
- 30–50 mg of oil × 40–60% = roughly 12–30 mg of carvacrol in a single drop.
- That single drop therefore carries about as much carvacrol as one to several whole teaspoons of dried leaf, and on the order of 4 to 60 times the per-serving culinary dose.
A capsule of standardised oil
- A 100 mg oil capsule at 50% carvacrol delivers about 50 mg — roughly 20 to 100 times a culinary serving, taken possibly several times a day.
Turn it around
- To collect 1 gram of essential oil you must distil roughly 50–200 grams of dried leaf. So by weight the oil is 50 to 200 times more concentrated than the herb — that concentration factor is what an essential oil is.
- A 10 mL bottle holds around 9–10 g of oil, representing on the order of 0.5 to 2 kilograms of dried savory leaf. Nobody eats two kilos of savory.
This is the whole point, in one line: a culinary sprinkle and a capsule of standardised oil are not different doses of the same thing; they are different exposures by orders of magnitude. Every "savory is very safe" statement refers to the first, and every serious caution refers to the second. Conflating them is how people end up swallowing phenolic oil on the strength of a food-safety record it does not share.
Why the Oil Is Not Taken Internally
Stated as a rule, because it does not need qualifying: savory essential oil should not be taken internally undiluted, and there is no established internal dose for it at all. The reasons stack up:
- Direct mucosal injury. Neat phenolic oil burns the mouth, throat, oesophagus and stomach lining. Case reports of mucosal injury from undiluted essential oils are the basis of this warning, not theory. PubMed search.
- Dose-related systemic toxicity. Phenols in quantity stress the liver, which has to conjugate all of them. Carvacrol's toxicology reviews describe clear dose-dependence — the therapeutic-window question that separates a flavouring from a hazard.
- No dose to follow. There is no trial, no monograph and no traditional internal dosing for savory oil. Any figure on a bottle is the manufacturer's invention.
- Unknown concentration. Because carvacrol content varies several-fold between oils, two bottles labelled the same can differ substantially in potency — so even a "careful" drop count is not a controlled dose.
- Children. Small body size plus immature conjugation capacity makes concentrated phenolic oils a genuine poisoning risk. Keep bottles closed, capped and out of reach; essential-oil ingestion is a recurring theme in paediatric poison-centre reports.
What is fine internally: savory leaf as a seasoning, and savory tea. Both are food-level exposures, and both are what the traditional record actually describes.
Topical Use and Real Dilution Numbers
Savory oil is one of the "hot" oils — the phenol-rich group that also includes oregano, thyme, clove and cinnamon bark, all of which are recognised skin irritants and sensitisers. If you use it topically at all, use it the way the aromatherapy trade treats that group:
- Always in a carrier oil — olive, sunflower, sweet almond, jojoba. Never neat on skin.
- Low concentration. A useful rule of thumb: 1 drop of essential oil per teaspoon (5 mL) of carrier is roughly a 1% dilution. For hot oils, stay at or below 0.5% — about 1 drop per 2 teaspoons of carrier — and lower still for anyone with sensitive skin.
- Patch test. A small amount on the inner forearm, left 24 hours, before using more widely.
- Small areas only, on intact skin. Not on broken skin, not on a wound, not on a rash.
- Never on mucous membranes — eyes, inner nose, mouth, gums, genital tissue.
- Watch for sensitisation. Repeated exposure to phenolic oils is a known route to allergic contact dermatitis, and once sensitised you may react to the whole related group. PubMed search.
- Do not add it to steam inhalation. Phenolic vapour irritates eyes and airways; plain herb in hot water is the traditional method and the safer one.
Lamiaceae Cross-Sensitivity
Savory sits in a family whose members share both aroma chemistry and allergen potential: oregano, thyme, marjoram, sage, rosemary, peppermint, basil, lavender and lemon balm.
Practical implication: if you have reacted to any of those — a rash from oregano oil, mouth tingling from thyme, contact dermatitis from a mint-containing product — treat savory as a plausible cross-reactor and introduce it cautiously or avoid it. Occupational contact dermatitis from Lamiaceae herbs is documented among cooks and food handlers, and carvacrol and thymol are among the implicated substances.
Stop immediately and seek help for signs of a significant allergic reaction: swelling of lips, tongue or throat; difficulty breathing or swallowing; widespread hives; dizziness or faintness. These are emergency symptoms regardless of the trigger.
Ordinary sensitivity is milder and more common: a rash, itching, mouth or lip tingling, or stomach upset. That is a reason to stop rather than to persist.
Pregnancy, Breastfeeding, Children and Pets
Pregnancy
The distinction matters more here than anywhere. Savory as a seasoning in food is not the concern. Concentrated preparations — essential oil, high-dose extracts, "medicinal" quantities — are what should be set aside. Two reasons: savory carries a traditional emmenagogue reputation, a class of herbs historically used with the intention of provoking menstruation or miscarriage, and separately there is no safety data at all for concentrated phenolic oils in pregnancy. Absence of data is a reason for caution, not reassurance. Discuss any herbal product with your midwife or obstetrician.
Breastfeeding
Same shape of answer: culinary use is food and appears throughout traditional cuisines; concentrated oil has no safety data and is best avoided.
Children
Savory in food is food. Concentrated phenolic essential oils are not appropriate internally for children, and bottles need to be stored like medicines — capped, closed, out of sight and reach. Two collateral rules worth repeating: no honey for infants under 12 months (infant botulism), and steam inhalation carries a real scald risk for small children.
Pets
Worth a line because it is genuinely dangerous and often missed. Cats conjugate phenolic compounds poorly — they are deficient in the glucuronidation pathway that clears carvacrol and thymol — which makes phenol-rich essential oils, including savory, oregano and thyme oils, disproportionately toxic to them, whether licked, applied to fur or diffused heavily in a closed room. Dogs are less vulnerable but not immune. Keep concentrated oils away from pets, and ask a veterinarian rather than the internet.
Medication Interactions: Known and Guessed
Honest statement first: there are no clinical drug-interaction studies of savory. Everything below is theoretical, flagged as such, and applies to concentrated preparations rather than seasoning.
- Anticoagulants and antiplatelet drugs. Some sources caution that thymol-containing herbs may affect clotting. This is asserted far more often than it is demonstrated, and there is no evidence it applies at culinary doses. If you take warfarin or another anticoagulant, the sensible course is to keep herb intake steady rather than to swing between none and a lot, and to raise any new concentrated supplement with the clinician managing your anticoagulation.
- Drug-metabolising enzymes. Monoterpene phenols interact with liver enzyme systems in vitro, and conjugation pathways are shared with many drugs. Whether any of this reaches clinical relevance at achievable doses is unknown. Direction of effect is exactly the kind of thing that gets reported backwards in secondary sources, so treat confident claims either way with suspicion.
- Diabetes medication. Because animal work reports blood-glucose effects for some Satureja species, a concentrated supplement alongside glucose-lowering medication is a theoretical additive risk. Nobody should be adjusting diabetes treatment on the strength of animal data.
- Sedatives and antihypertensives. Occasionally mentioned, not established.
The general principle worth more than any specific item: tell your clinician and pharmacist about every supplement and concentrated herbal product you take. They can check the ones that actually matter, and the honest answer for savory is that the evidence base is too thin for anyone to give you a confident list.
Buying, Labels and Storage
- Dried leaf. Look for a stated species. Buy small amounts; potency fades. Store closed, cool, dark, away from the stove. If a rubbed pinch has no strong peppery smell, it has nothing left to give.
- Fresh herb. Easy to grow — summer savory from seed each spring, winter savory as a perennial in a pot or a dry sunny bed. Homegrown is the cheapest way to have the real thing, and the freshest.
- Essential oil. Require the binomial and the country of origin. No species name, no purchase. Store away from light and heat, cap tightly, and keep it away from children and pets. Treat it as a household chemical, which is what it functionally is.
- Capsules and "standardised oil" supplements. Understand what you are buying: many multiples of a culinary dose, with no clinical trial, no established dose and no monograph behind it. Herbal supplements are not pre-approved for efficacy, and content can deviate from the label. If you use one anyway, tell your clinician.
- Regulatory status. Both savories are treated in food regulation as ordinary spices and natural seasonings, safe for their intended use as flavourings. That status is about flavouring food, and is not an endorsement of concentrated supplements or of internal use of the essential oil.
The Bottom Line on Safety
Four sentences, in decreasing order of confidence.
- Savory leaf as a seasoning is about as safe as culinary herbs get — long uneventful use, food regulatory status, no meaningful concerns outside allergy.
- Savory tea is a mild, low-risk, food-level preparation, delivering mainly rosmarinic acid and other water-soluble polyphenols rather than much carvacrol.
- Savory essential oil is a potent irritant that requires heavy dilution for skin, must be kept off mucous membranes, and has no established internal dose — because the same membrane-disrupting action that kills bacteria damages your own cells.
- Concentrated capsules occupy the least-supported position of all: many multiples of a culinary dose, with no clinical trial, no monograph and no dosing tradition behind them.
