Cardamom (Elettaria cardamomum)

Cardamom is the dried seed capsule of Elettaria cardamomum, a tall ginger relative from the monsoon forests of India's Western Ghats. It is the spice in masala chai, in Gulf coffee, and in a Swedish cinnamon-bun tin, and it is expensive for a mundane reason: the capsules ripen unevenly on the stalk, so every pod has to be picked by hand across several passes. By weight it sits just behind saffron and vanilla on the list of the world's costliest spices.

Before you buy any, know that "cardamom" refers to two completely different spices that are not substitutes for each other. Green cardamom is this plant. Black cardamom is Amomum subulatum — a different genus, dried over open fire, and aggressively smoky. Putting one where a recipe wanted the other is the single most common cardamom mistake, and the section below explains how to tell them apart.

On the health evidence: cardamom has been a digestive remedy in Ayurveda and Unani medicine for more than a thousand years, and it has a small but real modern trial record — a handful of randomised studies in Iran, one uncontrolled hypertension study in India, and one meta-analysis pooling seven trials. That is more human data than most spices have and far less than most supplement marketing implies. The numbers, and their limitations, are given below rather than summarised into a slogan.

Green Cardamom vs. Black Cardamom

Readers buy the wrong one constantly, and shops do not always help — both get labelled simply "cardamom." They are not the same plant, not the same genus, and not the same flavour.

The practical rule

If a recipe says cardamom in a dessert, a cake, a tea or a coffee, it means green. If a recipe says cardamom in a long-simmered meat braise, a curry base or a stock, check for the word "black" or "large" — and if the pods in the picture are big, dark and wrinkled, that is a different spice. Substituting black cardamom into a Swedish bun dough will make it taste like a barbecue; substituting green into phở broth will make it taste like perfume. Neither is salvageable.

This page covers green cardamom. Where research is cited below, it is research on Elettaria cardamomum unless explicitly stated otherwise — the two plants have different chemistry and their studies are not interchangeable either.

Overview

Elettaria cardamomum is a large herbaceous perennial in the ginger family, Zingiberaceae. It grows from a thick underground rhizome and throws up leafy pseudostems — not true woody stems but tightly rolled leaf sheaths — that reach two to five metres. It is a shade plant of humid evergreen forest, traditionally grown under a canopy of taller trees on hill slopes between roughly 600 and 1,500 metres.

The flowers are small, white with a violet-veined lip, and they are not carried up in the leafy shoots where you would expect. Instead they emerge on separate low panicles that sprawl along the ground at the base of the plant. Each pollinated flower becomes an oval three-chambered capsule, and inside each chamber sit rows of small, hard, dark, intensely aromatic seeds. The capsule wall itself has little flavour; it is a container, and its job is to hold the seeds' volatile oil in place.

That last point explains the whole economics of cardamom. Once you crush the pod and expose the seeds, the aroma starts leaving. Ground cardamom loses most of its character within a few months. Whole pods hold their oil for a year or more. This is why cardamom is one of the very few spices where buying whole and crushing at the moment of use is not connoisseurship but basic competence.

Harvest is the expensive part. Capsules on the same panicle ripen at different times, and a pod picked too late splits and loses its seeds and its price. So pickers go through the same plants repeatedly over a season, taking only what is ready, by hand, on steep wet ground. There is no mechanised alternative. That is the reason for the price, not scarcity of the plant.

Names and Identification

Binomial: Elettaria cardamomum (L.) Maton. Family: Zingiberaceae — the ginger family, which also gives us ginger, turmeric and galangal. The genus name derives from elettari, the Malayalam name for the plant in its home region.

Grades and origins on a label

Pods bleached white are not a separate species; they are ordinary green cardamom that has been sulphur-bleached for appearance, mostly for the Scandinavian and baking markets. Bleaching costs aroma. Buy green.

Other plants called cardamom

Besides black cardamom, you may meet Ethiopian or false cardamom (Aframomum corrorima, the korarima of Ethiopian berbere) and Siam or bastard cardamom (Amomum krervanh in Southeast Asia). Both are legitimate spices in their own cuisines. Neither is Elettaria, and neither should be substituted silently.

From the Western Ghats to Guatemala

Cardamom is native to the wet evergreen forests of the Western Ghats, the mountain chain running down India's southwestern edge through Kerala, Karnataka and Tamil Nadu. The Cardamom Hills in Kerala are named for it. It was gathered wild there long before it was cultivated, and it moved westward on the same ancient sea routes that carried pepper: to Mesopotamia, to Greece and Rome, and into Arab and Persian medicine, cooking and coffee culture, where it became so thoroughly domesticated that most people encountering qahwa assume the cardamom is local.

Its route north into Scandinavia is the strange one. Cardamom reached northern Europe through medieval trade with the eastern Mediterranean and became embedded in Nordic baking in a way it never did in Britain or France. Sweden today consumes cardamom at a per-capita rate wildly out of proportion to its distance from the Western Ghats, and kardemummabullar — cardamom buns — are a national fixture.

The modern production map, though, is dominated by an accident. Cardamom was introduced to Guatemala in the early twentieth century by a German coffee planter, and the volcanic highlands of Alta Verapaz turned out to suit it extremely well. Guatemala is now the world's largest producer and exporter, with most of the crop going to the Middle East. India retains the prestige grades and consumes most of what it grows. Sri Lanka, Tanzania, Papua New Guinea and Vietnam grow smaller amounts.

Traditional use records what people did, and why they thought it worked. It is not clinical evidence.

Active Compounds

Cardamom seed yields roughly 2 to 10 percent essential oil, and two compounds dominate it.

1,8-Cineole (eucalyptol)

Typically the largest or second-largest constituent, often in the range of 20 to 40 percent of the oil. This is the same molecule that makes eucalyptus smell like eucalyptus and rosemary smell cooling. It is responsible for cardamom's characteristic camphoraceous, nasal-clearing lift. Pharmacologically, 1,8-cineole is one of the better-studied plant volatiles: it has documented mucolytic and anti-inflammatory activity, and purified cineole is used as an approved respiratory medicine in some European countries. That research is on the isolated compound at therapeutic doses, not on cardamom pods, and the distinction matters.

α-Terpinyl acetate

Usually the other dominant component, sometimes exceeding 40 percent. This is the sweet, fruity, slightly floral ester that keeps cardamom from smelling merely medicinal. Indian cardamom tends to run higher in terpinyl acetate; Guatemalan tends to run higher in cineole, which is why the two origins genuinely taste different and why bakers often prefer Indian pods.

The supporting cast

A detailed 2020 critical review in the Journal of Ethnopharmacology catalogues cardamom's botany, phytochemistry and reported biological activities and is the best single entry point to the chemical literature.

Digestive and Carminative Effects

Mechanism. "Carminative" is an old word for something that relieves gas and bloating. The proposed mechanism for aromatic spices is a combination of relaxing gastrointestinal smooth muscle, stimulating gastric and biliary secretion, and reducing the surface tension of trapped gas bubbles so they coalesce and pass. Cardamom extracts relax isolated intestinal tissue in the laboratory, and cineole and terpinyl acetate are both antispasmodic in animal models.

Evidence. Animal and isolated-tissue work, plus a very long tradition. There is no randomised controlled trial of cardamom for bloating, dyspepsia, nausea or irritable bowel syndrome. That is a real gap, and it is worth stating clearly, because digestion is cardamom's most confident traditional claim and its least tested one.

What that means for you. Cardamom in chai after a heavy meal is pleasant, harmless, culturally endorsed by hundreds of millions of people, and unproven. Those things can all be true at once. If it helps you, use it. If you have persistent bloating, reflux or changed bowel habit, that needs a diagnosis rather than a spice.

Blood Pressure

Mechanism. Proposed pathways include mild calcium-channel-blocking and smooth-muscle-relaxing activity in blood vessels, a diuretic effect, and antioxidant activity that may improve endothelial function. All of these come from animal and in-vitro work.

The human study, in full. The most-cited trial is a 2009 study from Rajasthan, India, published in the Indian Journal of Biochemistry and Biophysics. Twenty people with newly diagnosed stage 1 hypertension took 3 grams of cardamom powder daily, in two divided doses, for 12 weeks. At the end of the study, systolic, diastolic and mean blood pressure had all fallen significantly (p<0.001), fibrinolytic activity had risen significantly, and total antioxidant status had increased by about 90 percent. Blood lipids and fibrinogen did not change. Participants reported a general sense of wellbeing and no side effects.

Now the limitations, which matter as much as the result. There were 20 participants and no control group — everyone received cardamom. There was no blinding and no placebo. Blood pressure in newly diagnosed stage 1 hypertension falls substantially in almost any study simply through repeated measurement, regression to the mean, and the effect of being in a trial at all; that is precisely why controls exist. The finding has not been replicated in a properly controlled trial in the fifteen years since. A subsequent meta-analysis of cardamom trials did not find effects on the metabolic outcomes it examined.

What that means for you. This is a promising, honest, small pilot study. It is not evidence that cardamom lowers blood pressure, and it is certainly not a reason to reduce or stop antihypertensive medication. If you like cardamom, three grams a day is a normal culinary quantity and appears safe. Treat any blood-pressure benefit as unproven.

Lipids, Glucose and Metabolic Markers

This is where cardamom actually has controlled trials — a small cluster of Iranian studies in people with non-alcoholic fatty liver disease (NAFLD), plus one meta-analysis.

The NAFLD trial. A double-blind, randomised, placebo-controlled study enrolled 87 overweight or obese adults with ultrasound-confirmed NAFLD (43 cardamom, 44 placebo). The cardamom group took two 500 mg capsules of green cardamom three times daily — 3 grams a day — for three months. Compared with placebo, cardamom significantly increased serum Sirtuin-1 and significantly reduced hs-CRP, TNF-α, interleukin-6, ALT, and the ultrasound-graded degree of fatty liver. Weight, BMI and AST did not differ significantly. A companion report from the same trial found improvements in serum irisin, glucose indices and lipid profiles.

That is a properly designed study with a placebo arm and a respectable size, and its results are genuinely interesting. The caveats: it is a single trial, from a single centre, and the group has published several papers from the same participant pool, which can make the evidence base look larger than it is. It has not been independently replicated.

The meta-analysis. A 2020 systematic review in Clinical Nutrition ESPEN pooled seven randomised trials of green cardamom. The pooled result: triglycerides fell significantly. There was no significant effect on total cholesterol, LDL, HDL, fasting plasma glucose or body weight. Oddly, BMI increased significantly across three small studies — almost certainly noise in a small pool rather than a real effect, but it is in the record and we are not going to leave it out.

What that means for you. The most defensible statement available today is: green cardamom at about 3 g per day may modestly lower triglycerides and some inflammatory markers, based on a small number of trials mostly from one research group, and does not appear to change cholesterol, blood sugar or weight. That is a much narrower claim than "cardamom is a metabolic superfood," and it is the one the data supports.

Oral Health and Breath

Mechanism. Cardamom's volatile oil, particularly cineole, has antibacterial activity in culture against several oral organisms, and chewing the seeds stimulates saliva, which is itself the mouth's main self-cleaning mechanism. A 2018 study in Molecules evaluated the chemistry and biological activity of essential oils from cardamom species, including antimicrobial testing.

Evidence. In vitro. Human trial evidence for cardamom specifically as a breath or oral-health intervention is thin to absent. The immediate freshening effect after chewing a pod is real and obvious, but that is aroma masking plus saliva, not necessarily antibacterial action.

What that means for you. Chewing a cardamom pod after garlic-heavy food works. It is a pleasant habit with essentially no downside. It is not a replacement for brushing, and persistent bad breath is usually a dental, sinus or reflux problem that deserves a proper look.

Culinary Use

Cardamom is one of the few spices equally at home in sweet and savoury cooking, and it crosses more cuisines than almost anything else on the rack.

Technique. Bruise or split whole pods with the flat of a knife and add pod and all to simmering liquids — the pod is edible but usually fished out. For baking, crack the pods, discard the papery husks, and grind only the black seeds; the husk dilutes the aroma and adds nothing. Toast the seeds briefly first if you want a rounder, less sharp flavour. Add ground cardamom late in cooking. And use less than a recipe written for stale supermarket powder will tell you — fresh cardamom is dramatically stronger.

Forms and Preparations

Dosage

Culinary: anywhere from two or three crushed pods in a pot of tea to a teaspoon of ground seed in a batch of buns. There is no meaningful upper limit at this level; cardamom is self-limiting because too much tastes soapy.

The dose used in human trials: 3 grams per day of green cardamom powder, split into two or three doses with meals, for 8 to 12 weeks. That figure is consistent across the hypertension study and the NAFLD trials, which makes it the only evidence-anchored number available. Three grams is roughly a heaped teaspoon of ground seed, or the seeds from somewhere around 25 to 30 pods — a real quantity, but an entirely ordinary one for a household that cooks with cardamom.

For any specific condition: there is no established therapeutic dose, because the trial base is too small to define one. Nothing here should displace treatment for hypertension, diabetes, high triglycerides or fatty liver.

Cautions and Contraindications

General safety

Cardamom is very well tolerated. It has a long global history of daily culinary use, and the trials at 3 g per day for three months reported no significant adverse effects. There is no established toxic dose.

Gallstones and biliary disease

Cardamom is traditionally regarded as a mild cholagogue — something that stimulates bile flow — and traditional texts advise caution in people with gallstones, on the reasoning that stimulating a gallbladder containing stones can provoke colic. The evidence for this in cardamom specifically is weak, but the caution is cheap: if you have known gallstones, keep cardamom to food amounts rather than taking gram-doses.

Pregnancy and breastfeeding

Culinary use is considered safe and is universal across South Asia and the Middle East. Therapeutic gram-level doses have not been studied in pregnancy, and some traditional sources advise avoiding large amounts. Stick to food quantities.

Drug interactions

Allergy and contact reactions

Rare, but reported. People allergic to other Zingiberaceae members — ginger, turmeric — should introduce cardamom carefully. Contact dermatitis has been described in spice workers.

Surgery

Given the fibrinolytic finding and the theoretical blood-pressure effect, stop concentrated cardamom supplements about two weeks before planned surgery.

Buying quality

Cardamom's price makes it a target for adulteration — spent pods from which the oil has already been extracted, husks bulked with other material, and ground cardamom cut with cheaper spices. Buy whole pods, and judge them by smell rather than colour: a good pod is loud from arm's length once cracked.
