Pineapple — Benefits Deep Dive
Pineapple occupies an unusual position in nutrition writing: it is simultaneously over-claimed and under-appreciated. The over-claiming is all about bromelain, the enzyme mixture that stops jelly setting, tenderises meat, and makes your mouth sore — a genuinely interesting compound with a genuine clinical literature, most of it built on concentrated extract from the plant's stem rather than the flesh anyone eats. The under-appreciation is the plain nutrition label: one cup of fresh chunks carries close to a full day of vitamin C and roughly two-thirds of a day's manganese, a mineral almost no fruit supplies in quantity and almost nobody thinks about. These four deep dives take both halves seriously. They separate what the enzyme does in a saucepan from what it does in a patient, follow the bromelain trials condition by condition — including the well-designed osteoarthritis trial that came out negative — give the two nutrients the space they deserve, and read the famous "pineapple aids digestion" claim against how protein digestion actually works. Three popular claims — that pineapple burns fat, cures cancer, or cleanses the digestive system — are addressed here as what they are: unsupported.

Bromelain: The Enzyme in the Stem
What bromelain actually is — a mixture of protein-cutting enzymes, not a single molecule — and why supplements are made from the fibrous stem rather than the sweet flesh. Covers GDU and MCU activity units and why a milligram figure on a label is not a dose, the 1997 study showing intact enzyme does reach the bloodstream, and the kitchen consequences: why gelatin will never set, why an overnight marinade turns meat to mush, and why fresh pineapple makes your mouth feel scraped while canned pineapple does not. Swelling, Sinuses, and Surgical Recovery
The clinical trials, condition by condition. A 2019 meta-analysis of six randomised trials found bromelain reduced facial swelling after wisdom-tooth surgery and late pain — but not trismus and not early pain. Three small trials support it as an adjunct in acute sinusitis. Osteoarthritis is where the story turns: the widely quoted 2002 study had no placebo group, and the randomised placebo-controlled trial that followed found no benefit. Also covers the negative muscle-soreness trial and the burn-debridement gel whose effect is dramatic and entirely non-transferable to eating fruit.
Vitamin C and Manganese
The least controversial and most under-covered part of the fruit. Vitamin C's role as the cofactor that makes collagen possible, why plasma levels saturate so that mega-doses achieve less than they promise, the iron-absorption trick that makes pineapple a useful partner to lentils and greens, and what the Cochrane review really says about colds. Then manganese: superoxide dismutase in the mitochondria, the enzymes that build cartilage and bone matrix, why deficiency is rare, and why the excess end of the range is the better-documented one.

What Is Actually in a Pineapple
One cup of fresh raw chunks — about 165 grams — is the reference portion used across these pages. Varieties, ripeness, and growing conditions shift the details, and canned fruit differs again, but this is the right order of magnitude.
- Water: around 86% by weight. This is most of what a pineapple is, and it is not a trivial fact — the water is a real part of why the fruit feels refreshing and filling for so few calories.
- Vitamin C: roughly 79 mg, close to 88% of the 90 mg Daily Value. One of the highest figures of any common fruit.
- Manganese: roughly 1.5 mg, about 66% of the Daily Value. This is pineapple's genuinely unusual entry — very few fruits supply meaningful manganese at all.
- Fibre: around 2.3 g, with more in the fibrous core that most people cut out and discard.
- Natural sugars: around 16 g. Pineapple is a sweet fruit and these pages do not pretend otherwise.
- Calories: about 80–85, essentially all carbohydrate.
- Smaller amounts of vitamin B6, folate, copper, potassium, magnesium, thiamin, and a range of phenolic compounds.
- Bromelain — which appears on no nutrition label, is present in modest and variable quantity in the flesh, and is concentrated in the stem and core.
Two features of that list deserve emphasis because they are what the deep dives are built on. The vitamin C and manganese together are an uncommon pairing in a single ordinary food, and they support adjacent parts of the same connective-tissue chemistry — vitamin C for building collagen, manganese for the enzymes that build the matrix collagen sits in. And bromelain is the only component with a clinical trial literature of its own, which is exactly why it needs the most careful reading.
How to Read Pineapple Claims
Almost every misleading statement about pineapple comes from one of five confusions. Learning to spot them converts a confusing subject into a straightforward one.
1. Fruit is not supplement. The clinical trials that produced pineapple's reputation used concentrated stem bromelain in capsules, at doses no fruit could deliver, and often a different enzyme form from the one in the flesh. A headline reading "pineapple reduces swelling" is usually reporting a study in which nobody ate any pineapple.
2. Weight is not strength. Bromelain is an enzyme, and what matters is activity, not mass. "500 mg" on a label tells you the weight of powder; GDU or MCU per gram tells you how much protein-cutting the enzyme can still do. Two products with identical milligram figures can differ several-fold.
3. An open study is not a controlled trial. The single most-quoted bromelain result for joint pain came from a study with no placebo group. When the placebo-controlled trial was run by overlapping authors, it found no significant benefit. Pain is among the most placebo-responsive outcomes in medicine, and uncontrolled studies of subjective symptoms almost always look impressive.
4. Which outcome improved? The dental meta-analysis is the model here: swelling improved, late pain improved, early pain did not, and jaw opening did not. That specificity is more useful than any summary sentence, and it is consistent with the mechanism — bromelain acts on the fibrin mesh that holds swelling, not on pain in general.
5. A combination result is not an ingredient result. Bromelain is often tested inside multi-enzyme tablets with trypsin, chymotrypsin, or rutoside. A positive result for the tablet is not a positive result for bromelain.
Applied consistently, those five give a defensible summary of the whole field: modest, real benefit for post-surgical swelling; a small encouraging signal in acute sinusitis; not established for osteoarthritis; negative for delayed-onset muscle soreness; excellent, uncontroversial nutrition from the vitamin C and manganese; and no support at all for fat-burning, cancer, or detox claims.
